Categories for the 2012 King of The Grill Barbecue Cookoff are as follows:
BEEF
BEEF BRISKET
Turn in nine (9) slices, ¼ to 3/8 inch thick. (Approximate size of a standard pencil)
POULTRY
ONE HALF CHICKEN, (No Cornish Game Hens)
Turn in three (3) halves of a whole chicken (each half must have a leg, thigh, wing, & breast portion and are not required to be jointed)
PORK
PORK SPARE RIBS (SLAB) (No Country Style, Baby Back or Loin Back) Turn in nine (9) full ribs, cut apart
ROASTS
PORK OR BEEF ROASTS (Bottom Round, Shoulder, or Rump) Turn in three (3) six oz portions
COOKED ON SITE: All meat will be brought to the site RAW…No pre-marinating, pre-cooking, or pre-spicing prior to official start time. Meat will be inspected at cook site after your check-in. Your official start time is as soon as your meat has been inspected.
SAUCE: You may cook with sauce and add sauce, marinade, sop, or juice to meat. DO NOT add any additional spices or sauce to meats once prepared for turn in. Meat is to be placed on foil for turn-in. Fold foil over meat and place on trasy that will be provided to you do not mark foil in any manner. No garnishing or markers are allowed.
